Beer and Beef Stew with Mashed Potatoes and Celeriac

Looking back through my archives, I realized I haven’t had, er, proper cooking on this blog in a while. See, I do a recipe column for New West and the Montana Kaimin, and I save the drunk ramblings for this blog. Dontcha feel special?

Anyway, I recently did a St. Patty’s day themed column for New West. Here’s the mashed potatoes, but you should go check out the beer and beef stew recipe, too.

Mashed Potatoes and Celery Root

3-4 red potatoes, cubed
1 celery root, peeled and cubed
2 cups chicken broth
Tablespoon cream
2 to 3 tablespoons butter
Dash pepper, salt

Bring chicken broth to a boil on the stove and chuck in the potatoes and celery root. Boil until tender and mash. Blend in butter, cream, salt and pepper to taste. Serve alongside beef stew.
